Chinese Almond Cookies


Ingredients:
2 3/4 Cups flour
1 Cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 Cup shortening
1 slightly beaten egg
2 Tablespoons milk
1 teaspoon almond extract
48 Whole almonds

Directions:
Stir flour sugar, baking soda and salt. Cut in shortening until mixture resembles cornmeal. Mix in egg, milk and almond extract. Shape into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. Place an almond in the center of each cookie and flatten slightly.
Bake at 325 degrees for 16 to 18 minutes. Cool on a wire rack.

Makes about 48 cookies

  1. I love these! We have been making these during the Christmas holidays since I was a child(1970's). They were always the first cookie my mother made to ring in the holiday season:-)
